Banana Leaf-Wrapped Salmon with Curried Lentils and Rice, Fall Vegetable Saute and Coconut, Cucumber and Cumin Raita (GF, DF)
Ingredients: salmon filet, banana leaf, basmati rice, lentils, squash, carrot, onion, bok choy, broccoli, sweet potato, coconut cream, curry powder, yellow curry, paste cucumber, cumin, canola oil, salt, pepper
Heating: Preheat oven to 350F. Remove raita container. Cover with foil and heat salmon, rice and vegetables for 20-25 mins. Remove banana leaves from salmon. Serve with raita.
