Peach Haskap Berry Cake
Three layers of white sponge cake and whipped Mascarpone icing, filled with Haskap coulis, and a cooked peach filling. Very light and lightly tart, balanced with the mascarpone icing’s sweetness.
(P.S – A Haskap is berry that looks like a long blueberry and tastes like a tart blackberry/blueberry/raspberry/wild berry hybrid.)
Ingredients: Haskap berries, peaches, cornstarch, mascarpone, 35% Cream, flour, sugar, emulsifier, lemon juice, eggs, baking powder, buttermilk.
