Roasted BBQ Chicken – BBQ Sauce-Glazed Roast Capon With Smashed Potatoes, Corn on the Cob, and Jalapeno Cheddar Sauce (GF)
Ingredients: whole capon, potatoes, corn, jerk seasoning, brown sugar, garlic, onion, scallions, cilantro, honey, lime, chili flakes, olive oil, salt, pepper
Heating: Preheat oven to 350F. Spread BBQ Sauce liberally over chicken. Reserve any extra sauce. Heat chicken and potatoes for 20-25 minutes. Meanwhile, in a separate roasting pan, heat corn 5-10 mins. Toss corn in jalapeno cheddar sauce. Serve any extra BBQ sauce with chicken.
