Squash and Goat Cheese Ravioli with Brown Butter, Crispy Sage, Sweet Potato and Roasted Pepper Ragu (V)
Ingredients: fresh pasta(flour, eggs, milk, olive oil), butternut squash, goat cheese, butter, sage, sweet potato, red pepper, shallots, garlic, red wine vinegar, sugar, salt, pepper
Heating: On the stovetop, in a large pot, bring 3-4L of salted water to a boil. Meanwhile in a small pot, heat brown butter until warm, but do not bring to a boil. Set aside. When water boils, turn off heat and add ravioli carefully. Let ravioli cook for 2-3 mins. Remove carefully and place on plates, top with brown butter, sweet potato ragu and crispy sage.
